Mini Pecan Pies


People, people, stop the presses! Not to give my ego a boost, but I have created one of the best pecan pie recipes that is delicious, quick, and easy! 

Now pecan pie is on my top 5 list of favorite desserts, but since moving out of my parents house, I never make it. Baking a whole pie for one person doesn't seem very justifiable. 

However, after seeing so many posts about mini pies this holiday season, I thought, "UM holy cow, let's make pecan ones!"

There are many recipes already created from other great chefs, like Danielle from Live Well Bake Often, but this recipe is my take on the classic.

Okay so I will stop rambling now and share my tasty recipe with you. You can thank me later!


Ingredients:

  • 1 store bought pie crust
  • 1/3 cup light corn syrup
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/3 cup brown sugar
  • 1 and 1/2 tablespoons melted unsalted butter
  • 1 lightly beaten egg
  • 3/4 cup chopped pecan pieces


Instructions:

  1. Start by preheating oven to 350°F.
  2. On a lightly floured surface, roll pie dough out and divide into 12 equal circles with a cookie cutter or top of a glass. Place each circle of dough in a 12 count muffin pan, while making sure that the dough covers the sides for a pie shape.
  3. In a medium sized bowl, mix together the corn syrup, vanilla, cinnamon, brown sugar, melted butter, egg and pecan pieces.
  4. Evenly distribute the mixture into the mini pie crusts.
  5.  Bake for 22-25 minutes, making sure the pie filling is set before removing from oven. Let the pies cool for 20 minutes before serving.
