Vegan Blueberry Donuts with Lemon Glaze

Here’s the deal; I hate those blog recipes where there is a ton of random information, stories, and explanation in the beginning. You know the recipes where you have to scroll all the way down to get to the ingredient list and step by step guide? Yeah that one, can’t stand them. So if you like donuts that you don’t have to feel guilty about eating, here’s the recipe.





Vegan Lemon Glaze:

Ingredients:
  • 1 cup confectioner's sugar
  •  1/4 cup choice of vegan milk (I prefer almond)
  •  1 1/2 tablespoon lemon juice

Instructions:

Combined confectioner's sugar and vegan milk first. Then add lemon juice gradually until smooth consistency is reached. Lastly, drizzle on donuts.



Vegan Blueberry Donuts:

Ingredients:
  •  1/2 cup of your choice of milk (I prefer almond unsweetened)
  •  1/2 teaspoon vanilla extract
  •  1/3 cup honey
  •  1 /12 teaspoon white vinegar
  •  3 1/4 tablespoon oil
  •  1/4 teaspoon salt
  •  1 teaspoon baking powder
  •  1 cup flour
  •  1/2 teaspoon cinnamon
  •  2/3 cup blueberries (fresh or frozen)

Instructions:

Preheat oven to 350 F and grease the donut pan if not nonstick. Combined dry ingredients and wet ingredients in two separate bowls leaving out the blueberries. Stir together dry and wet ingredients until dough like, then gently fold in the blueberries being careful to not crush them. Bake for 11-12 minutes and let stand for 4 minutes before removing from pan. Lastly, glaze the donuts and grab a napkin. It is time to eat!
