Healthy Spring Rolls with Sweet and Sour Sauce

We are back, back again with another amazingly easy healthy dinner option. This time the crazy cat lady kitchen is cooking up spring rolls with sweet and sour dipping sauce. I am keeping the ingredients pretty old school with my spring rolls to make it perfect for a busy night dinner plan, but spring rolls are awesome because you can basically put whatever you want in there. Bean thread noodles and shrimp would go nicely with this recipe as well, but for mine I like to make it as easy as possible.

Ingredients you will need:



Julienned Carrots

Julienned Sweet Peppers

Shredded Cabbage

Rice Paper or Spring Roll Paper

Sweet and Sour Sauce

Lettuce Leaves

Bean Sprouts 

Base the amounts that you will need on how many you are cooking for. I again was cooking dinner for my family of three and this is how much I prepared, but with a lot left over for another meal.


Once you have all the ingredients cut and ready to go, it is time to get the spring roll paper ready! This step is very easy, just like the rest. The main thing is to get the paper wet, which activates the sticky aspect of the paper to make it pliable. To do this, fill a plate with water and then place the rice paper onto the plate. Let it soak for a few seconds and then turn the paper over to help the other side get wet. Then transfer the paper to a dry plate and start to add the veggies. It's that easy. I do recommend placing the veggies vertically on the rice paper because once you are ready to roll up the paper, it makes it much easier to have everything stay in place. When you are ready to make the spring roll, just roll it up the same as if you were making a burrito. Roll up a few more and get the sweet and sour sauce ready for dipping because once you have one, you won't be able to stop. The whole meal takes about twenty minutes and there isn't much to it to make a scrumptious dinner or even lunch. This recipe is a great option for those busy nights where you still want to stay healthy, but don't have a lot of time. Hope you all enjoyed and if you try it comment below what you think.
